“The Gold of Genoa”
The so called «gold of Genoa» it’s a simple but tasty dish with very ancient origins. Crispy on top and soft inside is a delicious meal for any occasion. It is considered by Genoese people the «street food» to be eaten at any time of the day!
Legend has it that this dish was born by chance during the il 13th Century on a Genoese galley, when during a thunderstorm a few small barrels of oil and some bagful of chickpeas were spilled on the floor, and got soaked in seawater. Being the supplies quite short already, the purée made with chickpeas, oil and water was gathered as much as possible and put into a few bowls. Some of these were then forgotten under the sun and so the puree dried up, giving rise to a kind of delicious pancake. From that day on, the recipe was reproduced and the compound cooked in typical ovens at a very high temperature.
The method we follow to prepare our Farinata, is exactly the same as the one they’re still using today in the typical Genoese «Sciamadde»: the compound made with a mixture of water and chickpeas flour is set aside to rest for 6 hours, thereafter it is mixed together with olive oil and cooked in copper pans.

The chickpeas flour used to make our Farinata is free of any preservatives or additives. It is entirely made with chickpeas that are grown in Italy, strictly selected and grinded at the time of ordering. The result is a flour that is always fresh, and with a very intense aroma. Since chickpeas are a great source of plant-based proteins, our product is highly nutritious and particularly suitable also for those who follow a vegetarian or vegan diet.

Product in detail
Water, chickpea flour 33%, olive oil 15%, salt.
May contain milk, gluten, soy , fish and nuts.
Pre-heat the oven to 220°. Remove the protective film and bake the deep-frozen product for about 6 to 8 minutes until lukewarm. For fan assisted ovens reduce cooking-time of about 1 -2 minutes.
Set the heating programme to 500 W, remove the protective film and put the deep-frozen product in for about 6 to 8 minutes until lukewarm.
Freezer, **** o *** -18°: check the shelf-life on the package

Ice compartment: 3 days
Once defrosted the product should not be refrozen and can be stored in the refrigerator +4°C for no longer than 24 hours.
